Arugula and Mango Salad

As a Holiday gift each year, my husbands partner get us the fruit by the month club through Harry and David.  I really truly love this gift and hope she never changes it up.  It actually helps me a lot, because I know what’s in season.  I’m assuming they send you what’s in season right?  This past month we got mangoes.  I love mango flavored things, like smoothies and yogurt, but I have never been a fan of the real thing.  I was skeptical to peel and slice it.  I was even more nervous to taste it.  I took the smallest matchstick sized piece and gave it a go.  My mouth tingled and danced for joy!  I then realized I never tasted a mango that was perfectly ripe.  I love Mangoes, go figure?  I have an extra one hidden in my fridge and I think I am going to cut it up now for my breakfast, Yum!!!

Arugula and Mango Salad
 
Ingredients
  • 6 cups baby arugula
  • ¼- 1/2 cup thinly sliced red onion
  • 1 mango, peeled, sliced, and cut into matchsticks
  • 1 avocado, diced
  • ¼ cup extra-virgin olive oil
  • ¼ cup sherry vinegar
  • ½ Meyer lemon, juiced (regular lemon is fine)
  • 2 tablespoons honey
  • ½ tsp. Kosher salt
Instructions
  1. In a large measuring cup of small carafe combine olive oil, vinegar, lemon juice, honey and salt. Mix well and set aside. Can be made earlier and kept in the refrigerator.
  2. In a large bowl, combine the arugula, mango, red onion and avocado. Drizzle over half the dressing and add more if your salad seems dry. Add pepper if desired.
