If anyone loves egg salad like I do, but passes it up because it’s loaded with bad calories, then this recipe is for you.  This yummy alternative is loaded with heart healthy ingredients that will keep you coming back for more.

I like having recipes like this one my fridge, so that when I get home in the middle of the day I have something healthy to nosh on.  Try it on the new COCO LITE multigrain pop cakes, they are 16 calories for a huge round cake( the size of your hand!).

Avo-Egg Salad
 
Ingredients
  • 9 hard boiled eggs (for the best outcome, put eggs in pot and cover with water. Turn stove top to high and and bring to a raging boil. Turn stove off, cover pot and let stand for about 20 minutes. They should be perfect.)
  • 1 avocado
  • ½ lemon
  • 2-3 tablespoons of good quality olive oil. (I used
  • Oh, Olive
  • flavored with Herbs De Province)
  • Salt and pepper to taste
  • 1 tsp. celery seed
Instructions
  1. Chop eggs and put in large bowl. I used my egg chopper/slicer.
  2. In separate bowl, mash avocado with olive oil until smooth.
  3. Juice half a lemon and add to avocado mixture.
  4. Add seasonings and mix well.
  5. Combine avocado mixture to eggs and carefully combine.
  6. Adjust seasoning to your taste.
