Baked Chicken with Onions

If your anything like me, you make a lot of chicken in your house.   I’m always searching for new easy and delicious ways I can change things up.  Although the men in my family are always grateful with a home cooked meal, sometimes they can get a little critical.  It was smiles across the board last night.  So, here’s one for your archives.


Baked Chicken with Onions
  • 3 Large onions, peeled, cut in half and sliced thin.
  • 6-8 smashed and chopped garlic cloves depending on your love for garlic, I LOVE!
  • 1 tsp dried thyme (or a couple fresh sprigs)
  • 1 tsp. salt
  • freshly ground pepper to taste
  • 3 tablespoons olive oil
  • An assortment of chicken pieces, bone and skin on. I used 6 thighs, and six breasts.
  • Juice of 1 lemon
  1. Preheat oven to 400 degrees
  2. Combine slices onions, chopped garlic, thyme, and olive oil in large roasting pan.  Lay the chicken pieces, skin side down over onions and sprinkle with the lemon juice.
  3. Bake for 30 minutes, them turn chicken pieces over and continue to cook another 20 minutes.  Turn broiler on and brown for 5 minutes or so.
  4. Transfer chicken to platter and return pan to oven to caramelize the onions.  This is the hard part, Try to keep them in a good 15-20 minutes. Remove and spoon the onion mixture over the chicken.
