This is so typical of me, I find something I like to eat at the moment and I play around with different recipes until I find a winner.  This recipe here wins in comparison to my last post a couple days ago.  I still really like the avocado egg salad I made, especially if I am eating dairy free.   If you prefer a creamier option that resembles the real thing try this one.  My husband Marc thought it was way better.  Let me know what you think.

Better Egg Salad
 
Ingredients
  • 8 Hard boiled eggs
  • 2 tbs. olive oil
  • ½ cup 2% cottage cheese
  • ½ lemon, juiced
  • pepper to taste
  • ½ tsp. celery seed
Instructions
  1. Chop eggs and mix gently with remaining ingredients.
  2. *To make the perfect hard boiled eggs, place eggs in pot, cover with water and bring to a raging boil.  Turn off heat, cover pot and let stand for 20 minutes.
