Broccolini Toast

Wishing you all a wonderful holiday!!!  I hope everyone is spending the day with their loved ones.  This time of year I tend to reflect on my life.  I’m not sure if its my age and getting older, but everything seems to be falling into place.  I am usually very hard on myself,  but my husband tells me I can do anything.  I am usually scared to try new things but my husband tells me I am strong.  I sometimes overthink the things I do, but my husband keeps me sane.  Today was different.     I woke up this morning feeling proud (of myself). I have a feeling like I truly can do anything.  It may be the holiday season, but for now in this moment I am enjoying it.  Today, and every day after, please tell yourself that you are special, that you can do anything, that you make a difference.

Broccolini Toast
  • 1 pound broccolini
  • 2 tbs.olive oil
  • 2 garlic cloves, minced
  • red pepper flakes to taste
  • ½ lemon, juiced
  • kosher salt to taste
  • ½ cup grated parmesan cheese
  • 8 slices of thin provolone cheese
  • 8 slices of bakery style whole grain or sourdough bread
  1. Chop broccolini in small chunks
  2. In a saute pan, bring an inch of water to a boil. Add broccolini and cover with lid. Boil/steam for 3 minutes. Drain well.
  3. Wipe out pan and heat oil over medium heat. Add garlic and red pepper flakes and cook for one minute. Add broccolini and cook for 2 more minutes. Season with salt and transfer to a bowl. Add in lemon juice and parmesan.
  4. Heat broiler. Arrange slices on baking sheet and spoon broccolini mixture onto bread slices. Top with provolone cheese and broil until cheese is melted and starting to turn golden brown.
