T.G.I.F.!!!  I just came back from a vacation and I’m embarrassed to admit I’m so happy it’s Friday.  My husband is going to watch football with friends (Boys Night!), and all the boys are busy doing their own thing.  Smile, smile, smile!!! I’m staying home and catching up on MY DVR!!!  I don’t remember the last time I was this happy?  Pretty sad your all thinking.  Actually if your anything like me, you may be a little jealous?  I’m thinking a little wine, some popcorn, probably a spoonful or two of peanut butter, more wine, more of everything, my pajamas, my bed, my DVR, I almost have everything I need.  If only I had Mickey (my dog to cuddle with me I would be in absolute heaven!)  I’m getting better every day, don’t worry!  My next task is going through the pictures.  Maybe next week?

Ok, stop the tears and try this for your next side dish.  I love when I really wing it and come up with a winner.  This was a last minute decision with last nights chicken.  I was worried there was not enough food with substance for the boys.  I have an over cooking problem!   All you need is a rice steamer, the ingredients listed below and an outlet.  Fool around with your own flavors.

 

Brown Rice and Beans
 
Ingredients
  • 2 cups uncooked brown rice
  • 1 cup organic chicken broth
  • 1½ cups water
  • 1 25 ounce can black beans, drained and rinsed
  • ½ white onion, finely chopped
  • ½ teaspoon ground cumin
  • ½ teaspoon oregano
  • salt and pepper to taste
Instructions
  1. Put all your ingredients in rice steamer, and mix well.
  2. Turn on and set timer for 1 hour.
  3. Make sure to fill reservoir of steamer with water!
  4. When done, mix before serving.
  5. I loved this!!!
