Caramel S’more Layer Bars

I just looked back to the last recipe I sent to you all, and it was last Monday, I feel really bad, and I  hope you missed me:) , just like I missed reaching out to you!  So let me tell you what’s been going on at my house.

Let’s start with last Tuesday morning.  I was taking this Krav Magra boxing class, I know it sounds dangerous right?  You would think I if I was going to get hurt it would be a punch in the gut or face or something.  Not with me, I of course had to break my big toe by kicking the bag wrong!  I was so embarrassed too, that I finished the class without saying anything and hobbled to my car as fast as I could.  The teacher is a Chicago cop and trust me he would have no sympathy.  Someone should have warned me not to wear Nike Frees while taking a boxing class!!!

That was the first sort of bad thing that happened, then my 18 year old senior in high school came down with Mono.  I have completely been in the Mom/Nurse mode since.  Poor thing, I have never seen him so upset.  He is a player on his Varsity basketball team, and the Doctor informed us his season has to come to an end:(((  This is when being a Mom is the hardest.  I had a million thoughts in my head of what I wanted to tell him to make him feel better.  I wanted to hug him and tell him he has been such a big part of this team that he loves!  I wanted to cry right there with him!  But instead, I knew that just being there was what he needed,  no words were going to make him feel better.  He just needed time.  I am thankful that I responded as I did, because within a day, he had resumed his role as one of the captains on the team and showed his support off the court.  These are the type of experiences that make our children stronger, and I couldn’t be more proud of him.

Tony did go back to school today, so it’s back to the drawing board.

These bars are easy! You can make them last minute, and you can change them up with whatever sweet ingredients you have laying around.


Caramel S'more Layer Bars
  • 1 stick unsalted butter
  • 1½ cups graham cracker crumbs
  • ½ tsp. salt
  • 1 can (14oz) sweetened condensed milk
  • Mini marshmallows
  • mini round pretzels
  • Rolo candies
  1. Preheat oven to 350 degrees
  2. Melt butter and mix with graham cracker crumbs and salt and press mixture into the bottom of a greased 9 x 13 inch pan.
  3. Pour the entire can of condensed milk over top.
  4. Cover with mini marshmallows next, I probably used about two cups.
  5. Lay pretzels on top of marshmallows, as many as you can in a single layer not overlapping.
  6. Lastly, place a Rolo in the center of each pretzel and place in the oven.
  7. Bake for 20-25 minutes, until lightly browned.
  8. Let cool completely before slicing.
