Cauliflower Au Gratin

Louie and I stayed home all by ourselves last night.  Louie is my 3 month old puppy if you aren’t a frequent visitor here.

I have been home a lot, that’s for sure.  The last three months have been a lot of  baby talk, sitting on my kitchen floor, kisses, and eating.!  I have been working hard at training little Louie too.   As you can imagine my vocabulary these days consist of very few words.  I actually told a friend of mine to “stay”, while playing tennis!  Of course we lost the point because I started laughing:).  At least I didn’t tell her to sit:)

Since I have been home, spending most of the day in the kitchen, you can probably guess I have been doing a little extra eating:(  Last night was a chance to keep it small so I ate a whole head of cauliflower:)!!!!  I’m not good at portion control!  This is one of my favorite side dishes, or if you are a vegetarian Try it as a main course.  I did last night:)  Yummy!!!

Cauliflower Au Gratin
  • 1 whole head of cauliflower
  • 1 tbsp butter
  • 1 tbsp flour
  • ½ cup chicken or vegetable broth
  • ½ cup skim milk or unsweetened almond milk (I used almond last night!)
  • 2 ounces shredded cheese (cheddar, gruyere, fontina?), whatever floats your boat.
  • freshly ground black pepper
  • unseasoned breadcrumbs
  1. Steam cauliflower for 25 minutes.
  2. Preheat oven on broil setting.
  3. In a small saucepan, melt butter over medium heat.
  4. Add flour and whisk until smooth.
  5. Pour in milk and broth in a slow steady stream, whisking continuously until thick, this part will take you a good five minutes.
  6. Take off heat, and stir in cheese until melted.
  7. Put cooked cauliflower in deep baking dish.
  8. Pour cheese mixture over top and sprinkle with breadcrumbs.
  9. Broil in upper third of oven until top has a nice golden color, this happens fast so stay close.
