Cheesy Mashed Potato Casserole

IMG_0373I am so sorry, I don’t know what has gotten into me.  I feel like I am on the hunt for the most fattening and decadent recipes on earth!!!  I have the middle of winter blues, and my tight clothes are getting mad at me!  Or,  I guess I am getting mad at my tight clothes!!!  Tight jeans or not, you will want to share this with your family.  This is my go to mashed potato recipe, and I have been wanting to share it with you for a long time. I promise you will love it, just promise me you won’t send me a bill for your new jeans:)))

Cheesy Mashed Potato Casserole
  • 4 pounds Yukon Gold potatoes. peeled and cut into chunks
  • 8 ounces whipped cream cheese
  • ⅔ cup 2 % milk
  • 1cup shredded cheddar, plus more for topping
  • ¾ stick butter
  • salt and pepper to taste
  1. Preheat oven to 375 degrees
  2. Place cut potatoes in a large pot with salted water and boil until tender, 20-30 minutes.
  3. Drain potatoes and put right back into pot with remaining ingredients.
  4. Use a hand held mixer to combine ingredients until smooth.
  5. Put into a large glass baking dish and cover with 1½-2 more cups of shredded cheese.
  6. Bake for 30 minutes, until potatoes are fluffy and cheese begins to brown.
