Chocolate Chip Cookie Cheesecake Bars

These are yummy with a capital Y!!!  We had the family over Sunday to celebrate Marc’s birthday, and instead of a cake I made these.   They were a total hit!    We were leaving out of town at the crack of dawn the next morning, so I knew I could easily freeze whatever was left over.

Chocolate Chip Cookie Cheesecake Bars
  • 1 batch of your favorite chocolate chip cookie recipe
  • 2 8 ounce packages of cream cheese
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla
  1. Butter or spray 9 x 13 inch pan
  2. Pat down ½ the cookie dough batter on bottom of pan
  3. Mix cream cheese, sugar, egg, and vanilla until smooth and pour over dough
  4. Now with your hands carefully place remaining cookie dough on top of cream cheese mixture.  I did this by taking handfuls and pressing  down between the palms of my hand like I was making a burger, then I carefully placed down and continued to do this until the entire top was covered with absolutely no cream showing.
  5. Bake at 350 for 30 minutes.  Let cool completely before placing in the fridge.  Remember to keep these cold because of the dairy.
