This past week there has not been a lot of cooking going on at the Miller house.  Since my doggie Mickey passed away, we have had a family of mice making themselves way too comfortable.  I guess my fluffy friend was more than just a great companion, he was a built in exterminator.

I don’t know about you, but I’m pretty tight with my exterminator.  I’ve even given him a bottle (or two) of wine.  You never know when you are going to have an emergency.   I am actually getting to be kinda of an expert when it comes to mouse catching!  This hasn’t always been the case…I’m sure your wondering what I could possibly mean by this, so I’ll give you a quick synopsis.  About 10 years or so ago, I was downstairs early in the morning before it was time to wake the boys for school.  I was relaxing and enjoying my first cup of coffee when I saw something move out of the corner of my eye.  I screamed of course, and realized I saw my first mouse.  It was not cute like I had remembered from watching Tom and Jerry as a kid!   So I did what any housewife would do when an intruder is in the house, I called the police!!!  Needles to say, they did not think it was an emergency and told me it wasn’t a police matter.  Can you believe that?  I proceeded to tell them that I had to get my kids up, make them breakfast and get them to school and I was really scared.  They actually came!!!  The nice policeman looked around for 5 or 10 minutes as my kids were completely facinated by the fact an officer was in our house.  When it came time for him to leave my son Joey looks up at him with his big brown eyes and says, “One second” and runs upstairs into his room and back downstairs with a $1 dollar bill in his hand and gives it to the friendly officer and thanks him for being so nice to his mom!  I was dying.  Thankfully he had a cute personality and laughed along with me:)

I hope I haven’t ruined your appetite for this delicious Harvest bread made.  My husband Marc says it is the moistest (is that a word?) cake I’ve ever made.

 

 

Chocolate Chip Harvest Bread
 
Ingredients
  • 1 stick unsalted butter, melted.
  • 1 cup sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 4 Tbsp. buttermilk
  • 1 tsp. vanilla extract
  • 1¾ cups all purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ⅛ tsp. baking Soda
  • 1 cup chocolate chips
  • handful of sweetened coconut (optional)
Instructions
  1. Preheat oven to 350
  2. Grease and flour a large loaf pan.
  3. In the bowl of a stand mixer, combine butter and sugar.
  4. Add eggs, pumpkin, buttermilk, and vanilla.
  5. Add flour, baking powder, salt and baking soda and mix well.
  6. Fold in chocolate chips and pour into prepared pan.
  7. Sprinkle coconut over top and bake in preheated oven 45-50 minutes, until toothpick inserted comes out clean.  It will have melted chocolate on it, but no batter.
  8. Let cool 20 minutes, then loosen bread with a knife, and carefully remove from pan.  Place on rack until completely cool.  Slice and enjoy!!!
  9. ***while cooking check last the 15 minutes or so and cover loosely if coconut gets too brown.
