“Crunchy Salad”

I had to name this recipe “Crunchy Salad” on account of my 25 year old Nephew Jonathon.  I don’t know what it is, but it is his favorite!  It is the purist meaning of simple and healthy!!

"Crunchy Salad"
 
Ingredients
  • 1 sliced red bell pepper
  • 1 sliced yellow bell papper
  • 3 baby cucumbers, sliced
  • ¼-1/2 red onion, sliced
  • cherry tomatoes, halved
  • 2 tablespoons lemon flavored olive oil
  • ½ fresh lemon
  • Pico Limon to taste* (very spicy, I had to cover some of the holes with scotch tape)
Instructions
  1. *Can be bought at Garden Fresh


Add chopped veggies to bowl
drizzle olive oil, lemon  and Pico Limon over top and combine.

I usually make this a couple hours before dinner so flavors intensify.

You can add avocado and cheese if you like.  Enjoy!
