Tuesday’s are Whole Food’s rotisserie chicken day!  The scrumptious whole bird is $6.99, and I promise you it is the BEST chicken you will ever eat.  I make this chicken salad almost every week, and my whole family loves it.

Curry Chicken Salad
 
Ingredients
  • 1 whole Foods rotisserie chicken (all flavors are great)
  • ¼ cup 0% fage yogurt
  • ¼ cup low fat Hellmann's mayonaise
  • 3-4 tablespoons Major Grey's apricot chutney
  • 1 tsp. curry
  • chopped scallions (green part)
  • ¼ cup coarsely chopped cashews (almonds and walnuts work great too)
  • handful of raisins (sometimes I use dried apricots)
Instructions
  1. While chicken is still warm take skin off.  Pull white and dark meat off the bones and shred or chop all the meat.
  2. Mix all wet ingredients and curry in bowl, then add the chicken and mix well.
  3. Fold in chopped scallions, nuts, and raisins.
