Detox Worthy Chicken and Vegetable Soup

I have been so good since New Years!  I have been eating so healthy, and I feel great.  I did raid the peanut butter jar last night though;)  It was an all natural variety that you buy in the refrigerator section of the grocery store, and I am 100% obsessed!!!  If you asked my husband, he would say that’s an understatement!  I try them all, and my favorite is Parkers All Natural!!!!  This unbelievable peanut butter comes in three varieties, creamy, crunchy, and honey.  I am not in love with the honey, it’s too sweet for me, but to be completely honest Parkers peanut butter will be my last meal!!!

If you are going to raid your peanut butter jar, start off with this healthy chicken and vegetable soup, then it will be 100% okay;)

Detox Worthy Chicken and Vegetable Soup
 
Ingredients
  • 8 cups organic chicken broth
  • 6 cups water
  • 2 cups diced celery
  • 2 cups diced carrots
  • 2 cups diced green beans
  • 2 zucchini, diced
  • 2 pounds chicken, cut in bite size pieces
  • 2 tbs. olive oil
  • ½ onion, peeled but kept whole.
  • 1 tomato, chopped well
  • 2 garlic cloves, sliced very thin
  • 12 cilantro sprigs
  • salt and pepper to taste
Instructions
  1. Prepare all your vegetable to go into soup.
  2. Heat chicken broth and water in a large pot over high heat.
  3. In a small skillet, heat olive oil over medium-high heat and add ½ onion(kept whole), chopped tomato, and garlic and cook until very fragrant, about 3-5 minutes.
  4. Add the tomato and onion mixture to boiling broth along with the rest of the ingredients.
  5. Season with salt and pepper.
  6. Bring to a boil, and then lower heat to a simmer for about an hour, or until veggies are nice and soft.
  7. When ready to eat, discard onion and cilantro sprigs.
  8. Enjoy!!!
