Slow Cooker Butternut Squash and Apple Soup
  • 2 large Butternut squash, peeled, seeded, and cut in chunks
  • 1 onion, chopped
  • 3 Granny Smith apples, peeled and chopped
  • 6 cups vegetable broth
  • 4 cups water
  • 1 tablespoon curry powder
  • 1 tablespoon Garam Masala
  • salt and pepper to taste
  1. Throw everything in your slow cooker.
  2. Cook on low six hours.
  3. Use an Immersion blender to puree the soup. If you don't have one transfer the soup to a blender in small batches.
