Farmstand Salad

This time a year a great salad goes a long way.  During the holidays we generally stuff our tummy’s with way to much food.  I am guilty myself, so I try my hardest to eat healthy on days when we are home.  I love to experiment with different ingredients and test their compatibility.  One of the rules that I have is making sure there is color.  If the food looks good visually you have a head start.  I did make this salad during the months when strawberries were in season, but as I was looking through my photos I decided to still share.  If the strawberries don’t look good,  experiment with another fresh fruit or maybe even dried cranberries or cherries, yum!!!

Farmstand Salad
  • Romaine lettuce
  • onion, sliced thin
  • asparagus
  • corn on the cob
  • strawberries
  2. Prepare grill to medium high, or grill pan.
  3. Wash and trim asparagus.
  4. Place corn in reynolds wrap to steam on grill
  5. Drizzle olive oil, salt and pepper on asparagus and onions.
  6. Place all veggies on grill and cook until desired doneness.
  7. Let vegetables cool to room temperature.
  8. In large bowl, add romaine, grilled vegetables, and sliced strawberries.
  10. enough olive oil to coat salad
  11. /2 lemon, juiced
  12. *can add 2 tablespoons red wine vinegar if desired.
  13. Mix well and enjoy!
