Fiesta Chicken with Pineapple Salsa

Marc and I are all about New Years resolutions.  We have been eating so much that we barely recognize each other!  Tuesday was the day we made our truce,  we started out the first day of the new year, cleaning out our refrigerator and pantry.  I went to Whole foods and bought all the organic fruits and vegetables that would fit in our fridge.  I have been non-stop cooking so we have healthy food available to us when we get hungry.  The most important part of our resolution has a little hiccup though.  We hemmed and hawed about doing the cleanse we like to do,  the McCombs Lifeforce Plan.  It’s always a struggle to make the decision to start.  We look at our calendar to make sure we don’t have any parties coming up in the near future, anything that could make the first week or two hard.  We both decided to go for it!!!  The bad news is, we started with our leftover vitamins from the last time we did it, and I realized we were almost out, so I went to my chiropractors office to get more, he sells them.   The door was locked!  No note, nothing on the answering machine, nothing!  I drove home in a panic to Google anyone else that may sell the vitamins near me.  I mean come on, I have done this thing for three whole days!!!  I must have called 10 people, and with no success.  I called the company and they are out of them too!:(((  I seriously don’t know what to do!  Screw it, I never quit anything I start, vitamins or not I am eating clean for 8 weeks!!!

Fiesta Chicken with Pineapple Salsa
  • 8 chicken breast halves
  • 4 garlic cloves, smashed and chopped
  • 2-3 jalapenos, seeded and chopped
  • ½ large onion, chopped
  • 1 cup fresh cilantro, chopped
  • 6 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 3 limes, juiced
  • ½ pineapple, diced
  • 2 tomatoes, chopped
  • 2 Serrano peppers, chopped
  • ½ onion, chopped
  • ½ lime, juiced
  • 1 teaspoon salt
  • ¼ cup chopped fresh cilantro
  1. Chicken:
  2. Clean all the chicken and pierce each breast with a knife in several places.
  3. Puree all ingredients for the chicken marinade and put in large Ziploc bag along with the chicken.
  4. Try to get all the air out of the bag and put into the fridge for several hours.
  5. Grill and serve warm or at room temperature.
  6. Salsa:
  7. Combine all the ingredients for the pineapple salsa and serve along side the chicken.
  8. If you like your salsa hot, leave the seeds in when you are chopping them.
