Gluten Free Garlic Chicken

I enjoyed this chicken recipe more than I thought I would.  It’s so simple. that I thought the flavors wouldn’t hold up.  This dish requires no marinating and it’s a quick 1 2 3 and into the oven it goes.  The house will smell amazing when your husband, kids, dog, cat or whomever comes in the door, which scores you immediate points.  This is a weeknight meal at it’s finest.  Yum, I just myself up a piece after two days and it is still amazing.  So make extra for leftovers!

Gluten Free Garlic Chicken
  • boneless skinless chicken breasts, I try to buy organic
  • 1 cup olive oil
  • 8 garlic cloves, minced
  • ½ lemon, juiced
  • kosher salt and pepper to taste
  • gluten free Panko style bread crumbs, or use regular if you like
  1. Preheat oven to 425 degrees.
  2. Place Aluminum foil on desired baking pan.
  3. In a medium bowl combine olive oil, garlic, and lemon juice.
  4. In a second bowl large enough to hold the chicken pieces, add breadcrumbs and salt and pepper, mix well.
  5. Dip one breast at a time in the olive oil mixture letting excess drain off, and then into the breadcrumb mixture. Press coating into chicken to help adhere. Place on prepared baking pan. Continue with remaining chicken.
  6. Spoon the rest of the olive oil mixture over chicken breasts.
  7. Bake in preheated oven for 1 hour.
