Golden Granola

I have been thinking a lot about the circle of life lately.  Family members, friends, and adored pets come into our life and give us so much joy.  Sometimes we forget to cherish the time we have with them.  If we are blessed to live a long healthy life we are bound to experience some kind of loss.

Yesterday, I had to go to a funeral.  My mom’s best friend passed away quickly of cancer.  I was mad at the situation because I had wanted to go visit and tell her what a special person she was in my life.  I had known this woman since I was a small child and she watched me grow up.  I had a special connection with her and wanted her to know how much I loved her.

When I arrived at the funeral I first saw her daughter.  She walked up to me and wrapped her arms around me a said “My mother loved you so much.  She wore the necklace you gave her every single day, and now I am going to wear it.”  I remembered back to the time I was with her Mother, and she commented on liking the necklace I was wearing.  I took it off and placed it on her neck, gave her a kiss and said it was hers.  It brought a big smile to my face, because I realized at that moment I didn’t need to confirm my love to her in her last days, she did and always will know I loved her.

As a child I would make snacks for my mom and her best friend on their scrabble nights together, so in honor of her I made this healthy granola snack I know she would have loved!


Golden Granola
  • 2 cups honey
  • 6 tbs. coconut oil
  • 2 tsp. vanilla extract
  • 4 cups old-fashioned oats
  • 1 cup unsalted cashews
  • 1 cup sliced, unsalted almonds
  • 1 cup unsalted sunflower seeds
  • 4 tsp. cinnamon
  • sprinkle of sea salt
  1. Preheat oven to 325 degrees, and line a large baking dish with parchment paper.
  2. In a large bowl, combine oats, nuts, cinnamon, and sea salt.  Set aside.
  3. In a small saucepan, combine honey and coconut oil and bring to a simmer over low heat.  Simmer for about 4 minutes, stirring constantly.  Remove from heat and stir in vanilla extract.  Drizzle hot syrup over oat mixture and stir well to coat.
  4. Spread granola on prepared baking sheet, and bake, stirring frequently, until the granola has turned a golden color, about 20 minutes.  Remove from oven and let cool.
  5. Store in a air tight container.
  6. Enjoy!!!
