Grilled Salmon Salad with Charred Corn

I’m back!  Sorry I haven’t been posting lately, but I needed a break.  I have been enjoying my summer outside and away from my kitchen.  I hope you all have been doing the same.  Today is a hot one in the Chicago area, so I thought a little air conditioning mixed with one of my favorite activities would benefit all of us.  I think I came back with a hit.  If you like salmon salad you will love this.  If you are not sure you like salmon salad (like me), you will still love it…I promise!!!  It’s healthy, it’s light, and it’s easy.  I would put this recipe in a safe place, I think you will make it again and again!!!

Grilled Salmon Salad with Charred Corn
  • 1 - 1½ pounds wild caught king salmon (depending on how many people)
  • 1 lemon, sliced
  • 1 ear of corn
  • ¼ cup chopped red pepper
  • ¼ cup finely chopped red onion
  • 2 tablespoons finely chopped fresh dill
  • 2 tablespoons finely chopped flat leaf parsley
  • 1 tablespoon vegenaise (or mayonnaise of choice)
  • 2 tablespoons olive oil
  • kosher salt and pepper to taste
  1. Season Salmon with salt and pepper
  2. Preheat a grill pan or outdoor grill to medium high. If using a grill pan, add a couple tablespoons of olive oil to the pan. If using an outdoor grill brush fish directly with olive oil.
  3. Place fish skin side up in pan or outdoor grill and cook undisturbed for 10-12 minutes.
  4. Turn fish over and add lemon slices to pan and continue to cook until fish is cooked through, a little pink is fine. Turn lemon slices over after a minute or so and cook until golden and soft.
  5. Take the skin off the salmon and place into a bowl to cool while preparing the rest of your salad.
  6. Chop the lemon slices.
  7. Char the corn in a grill pan or outdoor grill, a couple minutes per side. I rubbed mine with olive oil first. Let cool.
  8. Shred the cooled salmon with two forks Cut the corn off the husk and add to the bowl. Next, take those beautifully caramelized lemon slices that you chopped and add them to the bowl along with the remaining ingredients and mix well.
  9. Refrigerate for a couple hours to enhance all the flavors.
