Hot nicoise salad

I am a little obsessed with Gwyneth Paltrow’s cook book My Fathers Daughter.  Everything I have made has been a huge success.  I adapted this recipe here and it is an amazing and easy crowd pleaser for company!

Amazing is all I can say!!!


Hot nicoise salad
  • ½ pound green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • ½ cup pitted nicoise olives
  • 7 tablespoons olive oil, divided
  • 1 large handful fresh basil
  • 1 yellow roasted pepper, roughly torn*
  • 1 red roasted pepper, roughly torn*
  • 4 6-ounce tuna steaks
  • Course salt
  • freshly ground black pepper
  • 4 eggs
  • 1 lemon, halved
  1. Preheat oven to 400
  2. Steam green beans for 4 minutes.  Immediately toss them together in a large roasting pan with the tomatoes, olives, 4 tablespoons of the oil, crushing the tomatoes ever so slightly with your hands.  Nestle the peppers in and around the vegetables.  Lay the tuna steaks in the middle of the pan, and coat each with ½ tsp. of the olive oil and rub with a generous amount of salt and pepper.  Crack each egg in a small ramekin(make sure to coat them first with some oil so they don't stick), then tuck each ramekin in the corners of the pan.  Drizzle each egg with remaining oil and sprinkle with salt and pepper.  Stick the whole thing on the oven for about 12 minutes, or until the eggs are just set, and tuna is cooked through but still moist.  Take out and squeeze lemon over everything, and serve!
