Kielbasa with Onions and Pablanos

Who wants a recipe that’s easy to do?

OK Ladies, I don’t want to hear you don’t eat meat, or pork, or whatever you have decided to take out of your diet you can make this with any variety of sausage.  I used the good old beef and pork kielbasa and it was one of the most delicious and easy recipe I have made in a very long time.  You can find a turkey or vegetarian option if you must, but I cannot and will not endorse it.

Kielbasa with Onions and Pablanos
  • 2 packages (I think they are 1 lb.) kielbasa sausages, cut in 4-inch pieces, halved lengthwise.
  • 3 large onions, cut in half and sliced
  • 6 poblano peppers, seeded and cut in strips
  • kosher salt and pepper to taste
  • 4 tablespoons extra virgin olive oil
  1. Heat grill to medium-high
  2. Place a large sheet of heavy-duty foil on large rimmed baking sheet.
  3. Toss onions and peppers with olive oil in large bowl, season with salt and pepper.  Mound vegetables on center of foil.
  4. Top with cut sausages.
  5. Place another large sheet of foil over and crimp all edges together to form a sealed pocket.
  6. Transfer packet to grill, and cook 25-30 minutes, until veggies are soft.
  7. Open the packet carefully, remove sausages and grill until browned and crisp, about 5 minutes.
