Layered Hummus Dip

I hope everyone is enjoying the Holiday season. As usual I am pouring over recipes for my annual New Years Eve party. We should have a pretty good crowd this year. As a tradition we will prepare our friends past favorites nestled between some fun new ideas to spice it up for 2018!

If you need a healthy appetizer for your party or just for you this is an absolute winner. I serve this yummy dip all year round.   Happy and healthy holidays to all!!


Layered Hummus Dip
  • 2 cups prepared hummus (I am obsessed with Sabra)
  • Olive oil
  • 1½ cups cherry tomatoes, chopped small
  • 8 ounces small cucumbers, washed, unpeeled, chopped small
  • ¼ medium red onion, chopped small
  • Juice of half a lemon
  • Salt and freshly ground black pepper
  • 1 to 2 tablespoons finely chopped parsley, mint and or dill plus more for garnish
  1. Spread hummus on a large plate and drizzle lightly with olive oil.
  2. Mix tomatoes, cucumbers, onion, lemon, about 1½ tablespoons olive oil, plus salt and pepper to taste in a bowl. Stir in herbs. Layer salad on hummus and sprinkle more fresh herbs as desired.
  3. Serve with fresh warmed pita and or your favorite dipping crackers.
  4. Enjoy!!!
