Another Monday and another start to eating right.  When I’m good, I’m really good:)!  When I’m bad, I’m pretty bad!!!  We went out for dinner 3 nights in a row and believe it or not I have to do it again tonight.  It’s really hard this time of year to keep it healthy, so it’s very important to eat light when you are home.  I try to have a lot of healthy, low fat items ready to eat in my fridge so when I’m hungry I can make a smart choice.

I bought a plain, no salt added rotisserie chicken yesterday with the thought to make a healthy chicken salad.  I love anything I can put on a cracker!  I also use orange and yellow peppers as a replacement for bread it’s great, just take your pepper and holding it upright cut down the sides making four large pieces.  It’s so good, try it!!!

Low Fat Mango Chutney Chicken Salad
 
Ingredients
  • 1 plain rotisserie chicken
  • ⅓ cup sliced almonds
  • 4 scallions (green onions),sliced thin, about ¼ cup
  • ½ cup raisins
  • ⅓ cup 0% Fage yogurt
  • ½ cup fat free sour cream
  • ½ cup mango chutney
  • freshly ground black pepper
Instructions
  1. Remove chicken from bones and skin and chop into chunks.
  2. Place all ingredients into bowl and gently mix making sure to incorporate.
  3. Place into fridge to let flavors marry for at least 1 hour.
  4. ENJOY!!!
