Maple Roasted Vegetables with Chicken Sausage

There are some vegetables that can simply be made with a little olive oil and a sprinkling of salt and pepper.  I personally can eat every single vegetable on earth like this!  My husband and kids may need an extra flavor boost.  Here is an easy and tasty way to bundle all those fall vegetables in a one dish meal.

Maple Roasted Vegetables with Chicken Sausage
  • 2 packages of chicken apple sausages, cut into rounds
  • 1 bunch of Brussels sprouts, cut in half and outer leaves removed
  • 1 large parsnip, peeled and diced
  • 1 butternut squash, peeled and chopped
  • 3 tablespoons olive oil
  • ½ lemon, juiced
  • ½ cup pure maple syrup
  • kosher salt and pepper to taste
  1. Preheat oven to 425 degrees.
  2. In a large bowl add all cut ingredients.
  3. Pour olive oil, lemon juice and maple syrup over and mix well to coat.
  4. Arrange on two baking sheets covered with aluminum foil and coated with spray for easier cleanup.
  5. Roast for 30 minutes tossing halfway.
