Mashed No Potato Casserole

Who doesn’t love a cheesy, gooey, mashed potato casserole?  I’m sure we would all eat a little differently if calories didn’t count.  I think we should all give it a try for a day.  Whatever temps your taste buds, GO FOR IT!  You go first and tell me how it goes, in the mean time make this.  A cheesy, gooey casserole made with cauliflower!  Sin free!

Mashed No Potato Casserole
 
Ingredients
  • 2 heads of organic cauliflower, cut into florets.
  • olive oil spray
  • ½ cup 0% fage yogurt
  • ½ cup skim milk
  • ½ cup shredded cheddar cheese
  • salt and pepper to taste
Instructions

METHOD

Preheat oven to 450 degrees
Put cauliflower florets on foil lined pan coated with spray
season generously with kosher salt and pepper

Seal tightly with more foil wrap to steam cauliflower

Cook in oven 20 minutes, then take out, uncover and put back in an additional 20 minutes.

Put hot cauliflower, yogurt, milk, and 1/2 cup cheese in bowl and mix with a hand held mixture.  The consistency with remain slightly chunky, this is what you want.

Pour ingredients in an appropriate sized casserole, top with more cheese and bake at 350 until warm, and cheese is melted.   I made mine earlier in the day and put it in the fridge, so mine took 30 minutes.
