I just started experimenting with making my own granola, and I don’t think I will ever buy it in the grocery store again.  The last batch I made was so good, and I thought there was no chance it could get any better.  Boy was I wrong!  I was looking through a new cookbook I bought,  and I came across a skillet version.  I tweaked it a little for my taste. and… IT IS SO GOOD!!!  If you like granola and have never tried to make it, give this recipe a try, it couldn’t be any easier.  If you are an avid granola maker, do me a favor and try this.  I would love to hear your feedback!

Nutty Skillet Granola
 
Ingredients
  • 1 cup quick cooking oats
  • 1 cup old fashioned oats
  • 1 cup unsalted sliced almonds
  • 1 cup unsalted cashews
  • ¼ cup coconut oil
  • ½ cup maple syrup
  • ¾ cup light brown sugar, tightly packed
Instructions
  1. In a large bowl, mix oats and nuts.
  2. In a large skillet over medium heat , combine oil, maple syrup and brown sugar.
  3. Cook, stirring constantly, until sugar and oil melt and begin to bubble.
  4. Add oat mixture and stir well to coat. Cook until granola begins to toast, 3-4 min.
  5. Remove from heat and let cool.
  6. Transfer to an airtight container.
  7. Will keep for up to two weeks.

***I made this in a large cast iron skillet, if you don’t have one that’s fine, but I recommend investing in one.
