Peanut Butter Nutella Sandwich Cookies

2018 is starting off to a great start!

My husband Marc and I brought in the new year with our annual NEW YEARS EVE party surrounded by our amazing friends.  Throughout the night I was reminded how lucky I truly am.  Especially when my husband looked at me trying to do the dishes at 1:00 am and ushered me to bed:)))  Boy do I love him!!!

Each year as we are cleaning up the kitchen we decide which dishes are keepers and which ones to take off the list. Sad to say we had a handful of “NEVER EVER MAKE AGAIN!”.  The Beef Tenderloin was barely touched along with a beautiful tray of Sushi.  The amount of money wasted there could finance another party.  That’s OK, just as I always told my kids you learn from your mistakes.  Less options, and more fun food for 2019!

Peanut Butter Nutella Sandwich Cookies
  • 2½ cups all purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup roasted lightly salted peanuts, finely ground
  • 0ne jar Nutella
  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. Sift flour, baking soda, baking powder, and salt, and set aside.
  4. In another bowl or stand mixer combine butter and sugars until light and creamy. Beat in peanut butter, then add the eggs and vanilla. Mix in flour mixture along with the ground peanuts.
  5. Using a cookie scoop, drop the cookies onto prepared cookie sheet and bake for 10 minutes. let cool couple minutes before transferring to wire racks to cool completely.
  6. Place a teaspoon of nutella in the center of each cookie and sandwich together.
  7. Enjoy!!!
