My husband Marc went on a guys golfing trip, WOO HOO!!!!  I think I was just as excited:)

What is it,  that no matter how many kids you have,  when your biggest (aka…husband) is gone the household runs like a dream.

Don’t get me wrong, I love this guy to death, but man is it relaxing and quiet with him gone.

My husband is a grown child!  A really cute one, but I realized with him gone he is the instigator.  He is the one that gets the kids going!  It was smooth sailing the last three days.

What’s the saying?  We can’t live with them and we can’t live without them.  So true!

So since I did miss the little bugger, I made this yummy dinner to welcome him back home.

My kids said “Best burger I have ever tasted!”  I think Marc agreed.

Poblano Burger
 
Ingredients
  • 3 lbs. 85 % fat organic, hormone free Angus ground beef
  • 3 Poblano Peppers, cut in half and seeded
  • Shredded Monterey Jack cheese
  • Kosher salt
  • Fresh ground pepper
  • 1 lime
  • Whole wheat buns
  • Sauce (
  • I did this for the boys
  • ,
  • and they loved it?)
  • ¼ cup low fat mayo
  • chili lime hot sauce to taste
Instructions
  1. See below...

METHOD 
shape meat into 1/2 pound patties
season with salt and pepper
season peppers with salt and pepper , and drizzle olive oil and juice of one lime.

Grill over medium high heat 4 minutes per side for medium rare, or until desired temperature.

I had some baby eggplant and asparagus going too.

When burgers are just about done top with Poblano and shredded cheese:))))) Now we’re talking!

Get your buns out and spread a little of the spiked mayo. (that didn’t sound right:)))) and top with burger.
