Roasted Cauliflower with Prosciutto

I’m sure you all heard about the tremendous amount of rain we had in the midwest last week.  We were among one of the countless homes that flooded.  We didn’t have it too bad, my basement was not underwater by any means, but the carpet was drenched to it’s core.  We decided to go ahead and rip up the 10 year old carpet we had and replace it.  My husband Marc will do anything to save some money, so Saturday he spent most of the day in the basement on his hands and knees ripping up the soaking carpet.  He took carloads and carloads of bags to a dumpster at a nearby school, is that legal?  Anyhow, I was really proud of him!  I felt like I had my own sexy handyman, except for the fact that he was in his flannel pajama pants rolled up to his knees, white undershirt, and dirty gym shoes.  I’m sure there was at least one inch of plumber butt showing too.  Hahaha!!!  Not his finest moment:)))).  Gotta love him though, he is my sexy handyman, plumber butt or not!!!

Roasted Cauliflower with Prosciutto
  • 1 head of cauliflower, leaves removed and cut into florets.
  • 3 slices prosciutto, chopped
  • 2-3 tbsp. olive oil
  • freshly ground black pepper
  • crushed red pepper to taste(optional)
  • Juice of ½ lemon
  1. Preheat oven to 400 degrees.
  2. Place all ingredients in a roasting pan and give it a stir.
  3. Roast for 30-40 minutes, depending on how done you like you veggies, stirring every 10 minutes or so.
