Roasted Lemon Chicken

I’m going to tell you about this amazing chicken in a minute, but first I need to get a couple things off my chest.

It’s my birthday this coming up Saturday WOO HOO!  I’m turning 45!

Age has never stopped me before, I always feel way younger than I am.  Most of my friends are 50 and over, so that keeps me feeling young too.  They are always like” You’re such a baby”.  After Saturday, I am closer to 50 than 40.  Do I need to start rounding up?  Do I need to change my wardrobe?  Cut my hair shorter?  One of my sons asked me not so long ago why ALL old woman  have short hair?  Good question, is it more age appropriate?

This sucks, I’m depressing myself!:(((((

I’m young, healthy, fabulous, and just made a great chicken!!!

Roasted Lemon Chicken
  • 1 whole roasting chicken
  • Chicken broth ( I love the Imagine organic kosher chicken broth)
  • olive oil
  • 2 lemons
  • Couple sprigs of fresh thyme
  • couple sprigs of fresh oregano
  • Greek seasoning
  • Pepper
  1. Preheat oven to 350 degrees
  2. Pour enough chicken broth to give you about ½ inch on bottom of your roasting pan. (This is very important, make sure you have a pan that has a rack inside.  Your chicken will get crispy on all sides!)
  3. Put chicken, breast side facing in your roaster, hopefully on a rack.
  4. Rub olive oil over the entire bird, this will keep the juices in.
  5. Cut 1 lemon in half and put into the cavity along with your fresh thyme and oregano.
  6. Cut the second lemon in half and squeeze over your chicken.
  7. Season generously with fresh ground pepper and Greek seasoning.
  8. Put chicken in lower third of oven and cook according to size of your chicken.  I had a large one and it took about 2 hours and 45 minutes.
  9. The drippings with the chicken broth and lemon was really tasty too!

This was really really yummy!!
