Scampi Style Grilled Shrimp

When we buy shrimp, we really buy shrimp. I think our all time high is 30lbs.  Shrimp freezes beautifully, and you can thaw it out at the last minute.  Obviously we make it a lot, and this is our latest preparation.  So so good!

First thing you have to do is thaw the shrimp.  Then clean each one, this is very time consuming. To do this, you need to deveine the back keeping the shells intact.  The picture above should help a little.  I make Marc do this.  The next step is to remove the legs and carefully butterfly the shrimp.  Use a sharp knife while doing this.Now you are ready to marinate.  I assembled the shrimp one layer at a time and spooned  marinade over top, then repeated until each shrimp was covered.

Marinate Ingredients:

Depending on how much shrimp you use, this is a guideline.  I made about 3 lbs.

8 tablespoons olive oil, I used lemon flavored
8 tablespoons dry white wine
8 garlic cloves, minced
1 teaspoon paprika
crushed red pepper to taste
Kosher salt and black pepper to taste
4 tablespoons chopped fresh flat leaf parsley

Grill should be set at medium high temp, and cooked face down 2-3 minutes, turned and continue cooking 2-3 minutes until done.
