Simple Kale Salad

My husband said this was the best salad he has ever tasted!  He brought leftovers for two days in a row to work!  I put this together at the last minute  with ingredients I had in the house.  Sometimes the less I plan the better my dinner comes out.  Do you find yourself throwing away produce that has gone bad before you get a chance to use it?  Try making up your own recipe before this happens.  I knew I had kale in my fridge because I have been going crazy with my new Vitamix blender.

Talking about my Vitamix,    A Vitamix is another great way to use up your produce. I try to add either kale or spinach into whatever smoothie I make myself.  I can’t explain how good it really is, you have to try it!   I have been drinking my lunch for the last week and I never have felt better.   Go to Costco and check out their presentation, it’s awesome.

I went back and forth between buying a Vitamix, which is basically an extremely high powered blender, to a juicer.  I was told a juicer is better if you have a sensitive stomach.  When you use a juicer it extracts only the juice from whatever produce you put in.  It takes out all the pulp/fiber which aids the finished product to pass directly into your bloodstream without having to go through the digestive process.  I was hooked after reading that.  But after a lot of consideration I felt that I would be spending a ton of money on produce, since you need like ten times as much produce to make just one glass.  I also figured drinking my smoothie with all the added fiber would keep me fuller much longer.  I definitely made the right decision for me, and I love my Vitamix.

Simple Kale Salad
 
Ingredients
  • 2 bunches of organic curly green kale, stems removed and chopped.
  • 1 cup dried tart cherries
  • 1 container crumbles goat cheese
  • ½ cup roasted salted sunflower kernels
  • Good Seasons CHEESE GARLIC Salad Dressing
Instructions
  1. Place kale, cherries, goat cheese, and sunflower kernels in a large salad bowl.
  2. Make salad dressing according to directions in the Good Seasons Cruet ( If you have never bought this before I suggest you go buy it right now. It is the best salad dressing you will ever taste!!!)
  3. Dress your salad and put in the refrigerator 1 or 2 hours before you are ready to serve.
