Slow Cooked Italian Beef Sandwiches

Yesterday when my son Tony got home from school he asked me what I was making for dinner, and before I could answer he said, “Don’t tell me, I know some kind of chicken right?”.  Unfortunately he was right.  He was like “Come on you have four boys,  cook something fun!  Something hungry boys would get excited about”.  He was so right, I have been a little selfish with my menus lately.  Tonight is the beginning of my summer cooking for a family of five hungry boys.  My mission is to bring the “Diners, Drive-ins, and Dives” to the Miller Kitchen!

Slow Cooked Italian Beef Sandwiches
 
Ingredients
  • 4 lbs. boneless chuck roast, cut into 4 large pieces.
  • Italian seasoning, I used a combination of Sea Salt, Rosemary, Garlic, Sage, Pepper, Oregano, Marjoram, Thyme,  Basil, and Red Pepper Flakes.
  • 1 Large Onion, cut in half and sliced.
  • 1 Jar of Vlasic Hot Pepper Rings.
  • 3 Garlic Cloves, minced
  • 3 cups water.

Method
1.  Season meat generously on both sides with the seasonings and put in slow cooker.  I have an All-Clad version and it is amazing.

2.  Cut the onions and arrange over top of meat.

3.  Pour the entire jar of pepper rings, YES this includes the juice!  Top with Minced garlic, and the water.

4.  Put top on, turn your baby to the low setting for 10 hours, and enjoy your day:)))  30 minutes or so before you eat, take the meat pieces out and get rid of any noticeable fat and shred using 2 forks.  Put meat back in the slow cooker.  Mine was cooking about ten hrs, so I turned my machine off but it stayed very warm.

4.  Serve with good French Bread and cheese if you like,  but don’t forget to spoon some of the juice over top.
