Slow Cooker Butternut Squash and Apple Soup

This Soup has a lot of kick to it.  The flavors burst in your mouth and leave you with a warm and satisfying finish.  I just love eating soup this time of year, it’s a wonderful light dinner that starts a cozy night at home.  I added Granny Smith apples to set off the heat and give a little sweetness as well.  I think this is a winner!

Slow Cooker Butternut Squash and Apple Soup
  • 2 large Butternut squash, peeled, seeded, and cut in chunks
  • 1 onion, chopped
  • 3 Granny Smith apples, peeled and chopped
  • 6 cups vegetable broth
  • 4 cups water
  • 1 tablespoon curry powder
  • 1 tablespoon Garam Masala
  • salt and pepper to taste
  1. Throw everything in your slow cooker.
  2. Cook on low six hours.
  3. Use an Immersion blender to puree the soup. If you don't have one transfer the soup to a blender in small batches.
  4. Enjoy!!!
