Spanish Tortilla with Kale

Do you ever have one of those days when everything seems to go right.  You wake up happier (and easier), your morning coffee tastes better, your kids are nice to you in the morning, the rooms are just a little cleaner when you do your morning walk through, you enjoy your daily workout, spend some awaited time with friends, and last but not least you have an enjoyable family meal that is filled with talk and laughter.  Yesterday, was one of those days.  Today didn’t start off so bad either, so I’m keeping my fingers crossed!  Maybe, just maybe today will come into a close second?

If you have been following me through my cleanse bantering, I have finished the first week.  This is about the time when it gets really easy, you almost can’t remember how you could have eaten anything other than the “YES FOOD” list.  I actually was wondering if anyone is interested in learning about the McCombs Lifeforce Plan, or even want to try it?  I would be an amazing coach (I really do think I would).  If anyone is interested, leave me a comment on the bottom of my post!

The above tortilla was served alongside a homemade chicken soup with brown rice, I’ll get that one out soon for you it was really yummy.

Spanish Tortilla with Kale
 
Ingredients
  • 4 Tablespoons olive oil
  • 1 large onion, chopped
  • 1 bunch of Kale, large stalk discarded and leaves chopped
  • 1½ bounds small yukon gold potatoes, thinly sliced
  • 6 large eggs, lightly beaten
  • Kosher salt and pepper to tase
Instructions
  1. Preheat oven to 400 degrees
  2. Heat 3 tbs. olive oil in large saute pan over medium heat.
  3. Add onions and potatoes, cook stirring occasionally for 10 minutes.
  4. Add Kale and salt and pepper, cook an additional 7-10 minutes, until potatoes are soft.
  5. Beat eggs in large bowl, add potato mixter and toss to coat. Scrape pan clean!
  6. Add remaining oil to pan and add egg and potato mixture.
  7. Place in oven and cook 20-25 minutes until sharp knife in pierced in middle comes out clean.
  8. Remove from oven and let cool a little before slicing.
