Spicy Lemon Chicken

Are you on twitter? I just joined and thankfully a friend of mine mentioned me (that’s how you say it right?), and now I have 2,744 followers!  This is kinda scary!  I’ve been watching YouTube videos all night to give me some guidance.  Is there a book callled “tweeting for dummies”, if so my kids would say it was written for me.

This is a one pan wonder, and while venturing into the cold weather months, I am all about easy roasting options.  Try to remember that I live with a house full of boys, so sometimes it’s tricky to keep them happy while adapting a healthy recipe. This dish falls into my favorite category, the gluten, dairy, and sugar free category.  Remember, eating healthy does not mean that you have to deny yourself of flavors.


Spicy Lemon Chicken
  • 3-4 lemons, sliced
  • 4 boneless skinless chicken breasts (can adjust white meat or dark meat depending on your taste)
  • 8 boneless skinless chicken thighs
  • 2 large sweet onions, peeled and sliced
  • 4 large poblano peppers, seeded and sliced
  • 4-6 large jalapeno peppers, left whole
  • 8 chicken sausages ( I used the fully cooked Italian style), cut in half lengthwise and quartered
  • olive oil
  • salt and pepper
  1. Arrange lemon slices to cover large roasting pan.
  2. Place chicken pieces over lemon and season generously with salt and pepper.
  3. Toss onions and peppers with olive oil and arrange over chicken.
  4. layer sausage pieces next.
  5. Place pan in preheated oven and cook for 45 minutes. Take pan out and move onions and peppers to outsides of pan. ( your kids will be asking when dinner is ready because your house will smell divine!!!)
  6. Change oven setting to Broil, and continue to cook an additional 15 minutes or until chicken pieces have browned.
  7. Watch your family devour!
