Sugar Valentines

Happy Valentines Day!!!  I hope you have a more romantic evening planned than I do.  We are hosting another pasta dinner for my sons basketball team.  This time it is taking place at a friends house and she had the idea to make it a Valentines theme.  You may not think there is anything funny about that since it is actually Valentines day, but the dinner is for 17 and 18 year old boys!  Let’s hope they think it is as hilarious as we do.  I made these cookies for the boys:)

Sugar Valentines
slightly adapted from ONE SWEET COOKIE by Tracey Zabar
  • 8 ounces (2 sticks) unsalted butter
  • 1¾ cups granulated sugar
  • 1 large egg
  • 2 tsp. pure vanilla paste
  • ½ tsp. salt
  • 2¾ cups all-purpose flour
  • Sanding (course) or pearl sugar for sprinkling
  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar. Add the egg and vanilla and mix to combine. Gently fold in flour and salt.
  3. Roll out the dough between two pieces of parchment paper until it is about ½ inch thick. Remove the top piece of parchment and using a heart shaped cookie cutter, cut out cookies and place on prepared pans. Sprinkle with sugar.
  4. Bake 10-12 minutes, or until edges just start to brown. Cool completely on wire racks.
