The Best Ever Slow Cooker Lentil Soup

I am on the biggest soup kick!!!  I thought I was bad at making soup, but my slow cooker has changed everything!  The best part about it is it takes no time at all and without any added fat your soup can virtually be fat free!!!

I’m trying really hard to give you guys some easy low fat recipes before the holidays.  I hope you don’t mind if I throw in some great dessert ideas too.  If you are anything like me,  you are probably starting to think about your holiday menus.  I am hosting a little  Shin Dig at my house on New Years Eve.    I usually have whoever is in town over to celebrate and bring in the New Year.    It tends to be small,  but loaded with great appetizers and yummy desserts.

If you are hosting a party here are some ideas for you to serve.

I promise to keep updating you with more recipes!!!  In the meantime let’s get back to the soup, I love it!!!  It has a little Mexican flair to it, so I ate mine with some crunchy tortilla chips, Yum!!!

The Best Ever Slow Cooker Lentil Soup
  • 1 lb. green lentils
  • 1 cup chopped onions
  • 3 large celery stalks, chopped
  • 1 cup chopped carrots
  • 2 quarts vegetable broth
  • 14 ounce can crushed tomatoes
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • ½ tsp. freshly ground black pepper
  • 2 tsp. kosher salt
  1. Put all ingredients in slow cooker and cook on low 10-12 hours.
  2. After 10 hours check to see if soup has thickened and lentils are soft.
  3. Enjoy!!!
  4. I served mine with a dollop of sour cream and tortilla chips!!!
