Turkey Burgers with Lemon and Mint

Happy belated Mothers Day to all you wonderful Mothers out there!  I had all these grandiose plans to post a special Mothers Day meal and the week got away from me, so sorry!  I have been reflecting lately about my life and how it’s sometimes hard to fit in all the things I plan in my mind.  I get annoyed with myself when I fall behind!  Sometimes I want to be all these wonderful things that I am not.  Somedays I wake up and I feel so lucky, to the point that I want to pinch myself!  I feel lucky when I look at my kids and I actually get tears in my eyes, I feel lucky that I found my husband (or that he found me), I feel lucky to have the warmth of my house and my wonderful friends.  It’s weird though, somedays I just feel out of sorts.  I think to myself, should I be working?  Should I tell my kids more that I love them?  Should I stop nagging my family to keep the house clean?  Should I let my kids do more things themselves?  Am I appreciated?

Yesterday, all my answers came clear to me.  My stepson,Ross handed me two Mother’s Day cards.  As I began to open them he asked me to wait.  Ross, is about to turn 23 years old by the way, he looked me in the eyes and said he wasn’t good at writing down his thoughts.  He told me eye to eye how much he loved me, how much I meant to him, how he could never ask for a better step mother in the world.  He told me this face to face, with a little crackle in his throat, with the tears forming in my eyes.  Ross gave me the best Mothers day present I could  ever have asked for, he gave me the proof that my life has made a difference, he  reminded me how important the job of a stay at home mother really is.  He let me know that being here, in my home was enough!  Ross’s simple words will last me a lifetime!

Turkey Burgers with Lemon and Mint
  • 2 pounds fresh ground turkey meat ( 1 pound white meat and 1 pound dark)
  • 6 green onions, chopped fine
  • Finely grated zest of two small lemons
  • 6 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 4 tablespoons fresh mint, finely chopped
  • 1 tsp. freshly ground black pepper
  • 2 tsp. sea salt
  • 2 large eggs, beaten
  • hamburger buns of choice
  1. Place all the ingredients in a bowl and mix well.
  2. Divide meat into 6-8 patties, depending on the size you want. (the mixture will be very wet, don't worry, this makes a juicy burger!)
  3. Place patties on a parchment lined pan and refrigerate at least an hour.
  4. Heat a couple tablespoons of olive oil in a large skillet over medium-high heat. Working in batches, add the patties and cook for 6-8 minutes per side, until golden brown and cooked through.
  5. Serve with extra lemon wedges to squeeze over burgers.
