Union Square Cafe’s Bar Nuts

I have come across this recipe many times from different food bloggers, magazines, and cookbooks.  I made this version for my New Years Eve party and I got rave reviews.  The recipe calls for fresh rosemary and to be honest I am not a fan.  I was promised this recipe will most likely convert rosemary haters like me.  When I took the first bite I was a little skeptical but each taste after the subtle aroma and taste began to grew on me.  I would definitely make this again.  Try it for your next party, I don’t think you will be disappointed.

Union Square Cafe's Bar Nuts
  • 18 ounces assorted unsalted nuts
  • 2 Tbsp chopped fresh rosemary
  • ½ tsp. cayenne pepper
  • 2 Tbsp. dark brown sugar
  • 2 tsp. sea salt
  • 1 Tbsp. unsalted butter melted
  1. Preheat oven to 350 degrees
  2. Spread nuts on parchment lined baking sheet
  3. Bake until light golden brown (10-15 minutes)
  4. Combine melted butter with rosemary, cayenne, sugar and salt in a small bowl.
  5. Drizzle mixture over warm nuts, toss well, and place back in the oven for 10 more minutes.
  6. Will keep in an airtight container for 2 weeks.
