Here we are again at the mercy of the weather reporters.  They cancelled school again last night in anticipation for the huge snow storm we haven’t gotten.  The roads were bone dry this morning.  It has started to flurry a little, but come on,  either let it snow or send the kids to school!

Yesterday was my hubbies birthday.  Happy birthday Marc, I love you.  I made a healthy and delicious meal to celebrate and my family gave me lots of praise throughout the meal:).  Today I am going to share with you this salad loaded with healthy ingredients.  I hope you enjoy it as much as I did.

Waldorf Broccoli and Kale Slaw
 
Ingredients
  • 1 cup plain greek yogurt (I used Fage 0%)
  • 4 tablespoons light mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 6 tablespoons apple cider vinegar
  • freshly ground black pepper
  • Kosher salt
  • 2 10 ounce bags broccoli slaw
  • 1 bunch kale, stems removed and chopped
  • 2 cups shredded carrot
  • 2 granny smith apples, peeled and cut into matchsticks
  • 4 ounces 75% reduced Cabot cheddar cheese, diced
  • roasted salted sunflower seeds for garnish
Instructions
  1. To make the dressing, combine yogurt, mayonnaise, garlic, dill, olive oil, vinegar, and salt and pepper. Set aside.
  2. In a large bowl, combine broccoli slaw, kale, carrot, apple, and cheese.
  3. Toss dressing over salad and mix until completely combined.
  4. Garnish with sunflower seeds.
  5. I would suggest making this at least an hour before serving so flavor will develop more.
