Oh my yummy god is all I can say about this!!!  A healthy delight!!!  I wanted to eat the whole thing!!!  My husband finally told me I had to share:(  I will be making this again and again.

Also…School started today:)))  I just did a victory dance!!!

Now I just got a little sad…for a second, my house is empty, no sleeping boys till noon;)  Another  victory dance!!!

My house is so quiet I can’t think, what is it about men, can’t live with them and can’t live without them.  Today I am living life to the fullest without them!!!!  Anyone want to join me?:)

OK, I’m still not sure what I’m doing today, but I know what you are doing.  You are all going to make this amazing zucchini casserole.

Zucchini Casserole
 
Ingredients
  • 4 cups grated zucchini ( I was lazy and got it in the salad bar, will do that again!)
  • 3 egg whites, 1 whole egg
  • 1 cup healthy smart bisquick
  • 1 small onion chopped as small as possible
  • ¼ cup olive oil
  • ¼ cup grated parmesan
  • salt and pepper to taste
Instructions
  1. Place all ingredients in bowl and mix well.
  2. Pour into greased pie plate or casserole dish.
  3. Bake at 350 for 45 minutes.
